Sundried Tomato Quinoa

1 (180g) jar Sundried tomatoes, sliced, oil reserved
1 onion finely diced
1 cup raw quinoa
1 1/3 cups water approx
1/2 cup chopped fresh parsley
Juice of 1 lemon
1/2 cup green olives
Salt and pepper


  1. Saute onion in the oil from the tomatoes on medium heat until soft, rinse quinoa thoroughly and add to pan, stir and toast for a couple minutes, add the tomatoes chopped, water, salt and pepper to taste and cook on low for 15 minutes until quinoa is light and fluffy.
  2. Add parsley and olives, pour over lemon juice.
  3. Serve warm or cold, or as a complete meal with a piece of grilled chicken or fish!
