Simple Shakshuka

    Ingredients

    • 2 tbsp olive oil
    • 3 garlic cloves, crushed
    • 1 yellow pepper, diced
    • 1 can chopped tomatoes
    • 1/2 tsp garlic powder
    • 1/2 tsp onion powder
    • salt and pepper
    • 3 eggs

    Method

    Heat pan to medium heat

    Sauté garlic and peppers till soft.

    Add in tomatoes and spices. Mix and heat through till reduced into more of a paste.

    Make 3 wells and pour in the eggs.

    Cover and cook on low for approximately 5 minutes, until the white of the egg has cooked and the yolk is still runny.

    ?Tip – Make sure the eggs are slightly underdone when serving as they will continue to cook when taking off the heat.
