Salmon à la Sicilienne

Ingredients

Side of salmon⁠
2 tbsp olive oil⁠
Juice of 1 lemon
1/2 tsp salt⁠
1/4 tsp pepper
1 lemon, sliced⁠
1 cup cherry tomatoes, halved⁠
1/2 red onion, sliced
1/2 cup green stuffed olives, sliced⁠ ⁠

Method

  1. Pre heat oven to 180 C⁠ ⁠
  2. Wash, rinse and pat dry salmon.⁠
  3. Mix oil, lemon juice, salt and pepper together and rub on salmon.⁠
  4. Top with the rest of ingredients.⁠
  5. Bake for 20-25 minutes uncovered.⁠
