Truffle Balls
1 cup finely ground almonds (or almond flour)
1/4 cup baking cocoa
2 Tbsp oil
3 Tbsp maple syrup
1 tsp vanilla
1/4 tsp salt
1/4 cup dark chocolate chips
Chocolate Coating
1 cup dark chocolate chips
1 Tbsp oil
Mix all ingredients except the chocolate chips until well combined.
Fold in the chocolate chips, roll into balls and place on baking paper.
Freeze for at least one hour (or overnight).
Meanwhile, melt the dark chocolate chips and oil until smooth.
Then dip each truffle into the melted chocolate with a fork and place back onto parchment.
Place in the fridge to harden and enjoy!
