- 1 packet peeled potatoes (2kg)
- 7 eggs
- 1 onion
- 1 cup oil
- 1 tbsp salt
- 1 tsp white pepper
Preheat oven to 180 C
Using a food processor, ‘S’ blade the eggs, onion, oil, salt and white pepper till onion has broken down. Transfer to a bowl.
Using a fine grater, grate the potatoes, immediately mix into the egg mixture by hand till just mixed.
Pour into tins and bake till browned, approximately 1 hour.
? To slice the kugel neatly, freeze the kugel for 2 hours, remove from tin (if baked in a foil tin, it will then peel off easily) slice while still frozen and then place in a fresh tin for serving.
