200g Halloumi cheese
400g variety of cherry tomatoes
¼ cup fresh basil leaves
¼ cup fresh parsley
½ red onion
Salt and pepper
Slice the halloumi into approximately 4mm thick slices, pat dry and then brush with olive oil on both sides.
Heat frying pan to medium high heat and fry the slices of cheese on both sides till golden brown, set a side.
Slice cherry tomatoes into halves, roughly chop the herbs, finely dice the onion season with olive oil and salt & pepper to taste.
To serve, add the cheese on top of the salad to avoid it getting soggy.
