Fluffy Pancakes

Ingredients

2 cups + 2 tbsp flour

2 tsp baking powder

1 cup caster sugar

1 cup milk

2 eggs

1/4 cup olive oil

Method

Mix all ingredients in a bowl

Heat a non-stick frying pan over a medium heat and spray a little oil in.

Add a ladle of batter, it’s quite thick but this is how it is supposed to be.

When the top starts to bubble, flip it over for another 30 seconds.
