Fig Salmon

    Ingredients

    • 1 side of salmon
    • 1/2 cup green fig jam + a little bit more for garnish
    • 1/2 tsp crushed chilli flakes
    • 1/2 tsp salt
    • Fresh figs in 1/4's for garnish (optional)

    Method

    Preheat oven to 180-200C

    Rub the jam, chilli flakes and salt over the salmon

    Bake uncovered for 20 minutes until desired doneness

    If using fresh figs for garnish, heat a few spoons of fig jam in a saucepan and caramelise the fig pieces for a minute or 2 on each side.
