300g frozen cauliflower rice
1/3 cup light mozzarella, and more for on top of pizza
drizzle of olive oil
garlic, salt and pepper
Defrost cauliflower rice, snip package and throughly squeeze all the liquids out, I then re drained it through some kitchen towel to make sure all excess fluids were drained
? Place the drained cauliflower rice into a bowl and add the egg, the 1/3 cup cheese and seasoning. Mix well ?
? Line a pie dish with bakewell (saved me cuKng and measuring!) and grease it with spray oil or a liNle olive oil, and press the cauliflower rice mixture firmly into it.
? in a preheated 180’ oven, bake the base for 30-35 mins, unTl the centre is golden & edges crisped. Then carefully flip it and peel the bakewell to cook the underside for a further 10-15 mins.
? when cooled spread passata and sprinkle mozzarella on top. Add desired veg eg. Mushrooms/sliced olives & spices eg. Oregano or fresh basil
? placed it back in the oven to melt the cheese ? and crisp base a bit further.
