Beef & Noodles Stir Fry

|300g fettuccine pasta noodles cooked per packet instructions|
|3 tbsp olive oil|
|400g beef strips|
|1 red, yellow and orange bell pepper all cut into strips|
|1 carrot, peeled and cut into strips|
|1 red onion, sliced|
|4 cloves garlic sliced|
|200g sugar snaps, topped and tailed|
|100g button mushrooms, sliced|
|Salt and Pepper|
|1/3 cup soy sauce|
|3 tbsp white wine vinegar|
1. Boil noodles according to package instructions, rinse and set aside.
2. Heat oil in wok or skillet to a medium high heat, add in the beef strips and toss for 3 or 4 minutes or till preferred doneness. Remove from pan and set aside.
3. Add the onion, garlic and carrots to the wok on a medium flame and toss for 1 – 2 minutes, then add in the rest of the vegetables for a further 3 minutes.
4. Add the noodles and beef back into the wok, toss to mix, season with salt and pepper and the soy and sauce and vinegar. Toss for a further minute to allow the noodles and beef to heat through.

💡 Add in some chilly for an extra kick of flavour
