Courgettes in Tomato

Ingredients

1 packet Sliced courgette (500g)

2 tbsp Olive oil

1 onion sliced

4 cloves garlic sliced

1 tin chopped tomatoes

3 tbsp tomato paste

Salt and pepper

Garlic powder

Method

Sauté onions and garlic in pan with olive oil until soft. About 10 minutes.

Add in the courgettes and the tomatoes and paste. Stir and let it heat through for 2-3 minutes.

Season with salt, pepper and garlic powder.

Continue to cook on a low simmer for 10-15 minutes.
