Ingredients

Romaine Lettuce⁠

Sweet Potato cubes⁠

Avocado⁠

Pomegranate seeds⁠

1/2 cup mayonaise⁠

1 tbsp red wine vinegar⁠

1 tbsp mustard⁠

2 tbsp sugar⁠

Salt and pepper⁠⁠

Method

Roast sweet potato with olive oil, salt and pepper.

Assemble salad when sweet potato has cooled.⁠
