Side of salmon or fillets
8 – 10 mini peppers sliced
Juice of 1 lemon
2 – 3 tbsp balsamic vinegar
Salt and black pepper
Preheat oven to 180 C.
Pour lemon juice over the salmon, then top with the sliced peppers.
Drizzle with the balsamic vinegar and season with salt and pepper to taste.
Bake open for 20 minutes
