Swiss Roll

3 eggs

3/4 cup sugar
1/3 cup potato flour
2 tbsp cocoa powder
2 tsp baking powder
Jam and whipped cream for filling



  1. Beat eggs for 4-5 minutes.
  2. Gradually add the sugar until mixture is thick and creamy.
  3. Sieve the flour, cocoa and baking powder.
  4. Fold into the mixture.
  5. Pour onto lined flat baking tray.
  6. Bake 6-8 minute at 200C
  7. Turn cake out onto a sugared tea towel, trim edges and roll up. When cool, unroll gently and spread jam and then whipped cream filling and roll up again firmly.
