Balsamic Aubergine Salad
Ingredients
- 1/4 cup olive oil
- 3 gloves garlic, crushed
- 1 red onion, diced
- 1 yellow pepper, diced
- 1 orange pepper, diced
- 2 aubergines, diced
- 1 cup cherry tomatoes
- 3 tbsp balsamic vinegar
- Salt & Pepper
Method

Saute the onion, garlic and pepper on a low/medium heat, until soft. Season with salt and pepper.

Add in the aubergine, stir and cook for approximately 20 minutes until soft.

Add in the tomatoes and balsamic vinegar and season with salt and pepper.

Cook for a further 10 minutes, add in more oil if needed. Serve warm.
