Honey Coffee Cake

9 eggs, separated
1 1/2 cups sugar
1 1/4 cups honey
1 tbsp vanilla sugar
1 cup oil
1 tbsp coffee dissolved in 1/4 cup water
1/2 cup kiddush wine
2 1/4 cups flour
2 tsp baking powder
For the icing –
2 cups icing sugar
3 tbsp boiling water


  1. Pre heat oven to 180C.
  2. Beat egg whites and sugar until stiff.
  3. Add in the rest of the ingredients and beat until combined.
  4. Grease and flour cake tin, bake for 45 minutes or until done.
  5. Allow cake to cool completely before icing.
  6. Sieve icing sugar and add the water, stir till smooth, drizzle over cake and allow to set
